Salt of the Earth
 


Sel Marin, Organic Natural Celtic Seasalt from the Isles of Noirmoutier and de Ré on the Atlantic coast of France.

To enjoy the best flavour in food people are realising that a little salt is important. Not any salt will do. Alain Ducasse, France's only holder of 6 Michelin stars, will only use salts from this region in all his cooking. Fleur de sel is his favourite ingredient.

Salt from the Isles of Noirmoutier and de Ré, dried only by the sun & wind, does not undergo any treatment after harvesting. Unlike many other seasalts which have a bleached white appearance, our salts are neither washed or refined. They are grey in appearance, which means they are naturally high in mineral salts - magnesium, sodium, potassium,calcium and in trace elements - manganese, iron and zinc.

These trace elements and minerals are essential to the formation and maintenance of bones, muscles and other body structures. Salt also helps maintain a smooth metabolism.

Most salt consumed today has lost it's natural properties through processing and ends up without essential trace elements and vital minerals.

For the salt to preserve it's purity it has to be harvested in traditional methods. On the Isle de Noirmoutier salt has been harvested in the same way for 1500 years and on the Isle of de Ré since the Middle Ages.

The sauniers or salt harvesters still harvest the salt by hand with the help of a rake-like tool they scrape the salt together. First they collect the Fleur de Sel, the delicate film of white crystals that form on the surface. Next they skillfully remove the grey salt and pile it up at the side of the ponds to drain. Finally it is stored in a warehouse or salorge.

In addition to use with food try a handful of salt in the bath for relaxation, a pinch in a glass of water for vitality and taste, or as a fertilizer for potted plants etc.

Coarse Celtic Sea Salt
Untreated and unwashed, coarse Celtic Sea Salt is used mainly to salt the water in which food is boiled, unsalted meats, stocks and dishes with a little salt crust. It is also the best choice for making the wonderful health-giving drink "sole". (Recipe to follow). This salt's essential trace and macro-elements stay within the crystal only as long as the moisture of the salt is retained. This water-retaining part of sea salt, centered around the magnesium salts that are highly water retentive, is called "mother liquor" or bitterns. Biologists attest that the mother liquor restores hydro-electrolytic imbalance. This moisture always present in coarse Celtic sea salt settles at the bottom of the container or bag, leaving the top part almost dry to the touch, Thus it is always advisable to mix the contents of the salt bag before use. Store in a cool dark place to retain the protective moisture content and precious mother liquor, which is the heart of the salt.

Fine Celtic Sea Salt
As a seasoning or added to aromatic herbs or vegetables, fine Celtic Sea Salt brings out the flavour of grills, fish dishes and soups, giving you the genuine purity of natural sea salt. Perfect as a condiment in a saltbox on the dining table.

Fleur de Sel (Flowers of Salt)
"Fleur de Sel" is the finest quality salt and has an exceptional flavour. It is a true "white gold", highly sought after by great chefs, connoisseurs and the most discriminating gourmets for its delicacy and unique flavour. On certain days, under particular action from the sun and wind, fine light crystals of salt float to the surface of the salt marshes. This is Fleur de Sel. It is delicately skimmed off the surface and dried in the sun in a small wicker basket. It is used as a finishing touch on warm vegetables, grills and fish to heighten their flavour.

The Healing Power of Sole
When water and salt merge we have sole (pronounced so-lay). We need salt to live, but ironically salt can also be detrimental to our health. The reason is very simple-our regular table salt has nothing in common with original sea salt. Regular table salt has been chemically cleaned and reduced to only sodium and chloride. Important trace elements and minerals have been removed so the remaining salt by itself is not natural element any longer.
However, the mixture of water and natural sea salt is the primordial soup of life, and the most flexible, physical representation of pure solar and light energy. They create a new dimension. When water combines with salt, the positive ions of the salt surround the negative ions of the water molecules and the negative ions of the salt surround the positive ions of the water molecules. In this process the geometrical structure of the salt and water is changed and a totally new structure is formed. Water is no longer water, and salt is not salt anymore. The crystalline structure of the sole is so profound that its vibration lasts over 24 hours in our bodies. And the body uses this vibration to heal.
The amount you take is not as important as the regularity. From a biochemical viewpoint, within minutes the whole stomach and intestines are being stimulated and this again stimulates the digestion and metabolism. The overall availability of electrolytes is built up and thus the conductivity in the body is increased, which in turn affects the circulation. The closest thing in nature to our bodily fluids is ocean water.

Benefits of drinking Sole
The sole supplies the body with the natural energy stored in the salt crystal, and the body can hold this up to 24 hours.
Can harmonize the alkaline/acidity balance in the body and normalize blood pressure.
Can dissolve and eliminate sediments, which lead to various forms of rheumatism such as arthritis as well as kidney and gall bladder stones. With sole one can get rid of heavy metals such as lead, mercury, arsenic and calcium because the sole is able to break up their molecular structure. For the body to get rid of these deposits it has to first metabolize them.
Can lower the craving for addictive desires.
It may help with skin diseases by cleansing the body from inside out.

Preparing the Sole.
Fill a glass jar to approximately just over one quarter with coarse Celtic sea salt crystals. Add good spring water or filtered tap water completely filling the jar. Stir and leave for 24 hours.
Check. If the salt crystals have dissolved completely, add a little more salt. Repeat process until saturation point has been reached- that is when salt crystals remain at the bottom of the jar and will no longer dissolve in the water.
After 2-3 days the sediment will settle at the bottom of the jar and the solution will become clear.
The solution will have become saturated at 26% and is now sole, which is a sterile solution and will remain stable over time.
Drinking the Sole.
On a daily basis, put one teaspoon of sole in a glass filled with 250 ml. of good quality spring water. Drink it on an empty stomach first thing in the morning. Wait ten minutes before drinking or eating anything else. Make this a lifetime habit.

Other uses for Sole
  • Sole is recommended for teeth brushing. It balances the pH in your mouth and works against gum bleeding, periodontal diseases, ulcers and bad breath. If used consistently your teeth will become whiter again and tartar will dissolve.

  • A sole bath is recommended for skin diseases, rheumatism and joint diseases, after operations, for gynecological and for children with a tendency to recurring infections, to strengthen the immune system and to detoxify the body. The concentration has to be at least the same our bodily fluids (approximately 1%) to activate the osmotic exchange ratio, so you would need to use approximately 500gms to 1kg of coarse Celtic Sea salt. And the bath would need to be 20-30 minutes long.

  • Sole steam inhalation: Used against chronic and specific illnesses of the upper and lower respiratory tracts (asthma, bronchitis, cystic fibrosis, as well as sinus and ear infections). Put approximately 10% of coarse Celtic Sea salt directly in hot water and inhale the vapors for ten to fifteen minutes, keeping your head and bowl covered. The respiratory tract needs about 30 minutes after inhalation to bind the deposits and poisons by producing mucus and secretions, which will usually cause a light cough. This application can be done daily depending on the individuals well being
